Speedy Reuben Casserole
Description
Luscious layers of hash browns, sauerkraut and corned beef covered with melted Swiss cheese.Ingredients
- * 1 package (20 ounces) frozen fully-cooked hash browns
- * 1/4 teaspoon salt
- * 1/4 teaspoon ground black pepper
- * 1 can (16 ounces) sauerkraut, drained, squeezed dry
- * 1 cup Thousand Island dressing
- * 1-1/2 teaspoon caraway seeds, crushed
- * 1 package (16 ounces) Swiss cheese slices
- * 2 pounds Cook's® Corned Beef, cooked, cut into 1/2-inch cubes
Preparation
- Preheat oven to 450°F. Spray 13x9-inch baking dish with cooking spray. Add hash browns; spread to evenly cover bottom of dish. Sprinkle with salt and pepper. Bake 15 to 20 minutes, or until heated through.
- Spread sauerkraut over potatoes. Drizzle with dressing; sprinkle with caraway seeds. Top evenly with corned beef and cheese.
- Bake 15 to 20 minutes, or until casserole is heated through and cheese is melted.
