Grilled Corn with Chive Butter
Description
Add that ear of corn to your summer grilling, then top with a chive spread.Ingredients
- * 4 cobs of corn, with husks
- * 1/4 cup butter
- * 2 tablespoons chopped fresh chives or green onion tops
- * 1/4 teaspoon salt
- * 1/4 teaspoon freshly ground black pepper
Preparation
- Prepare corn for grilling. Peel back husks, leaving husks attached to base of cob. Remove and discard corn silk from ear of corn. Reserve a thin strand of inner cornhusk from each cob; bringing attached husks back up over each ear; tie with reserved strips of cornhusk. Soak corn in cold water to cover at least 20 minutes.
- Preheat grill according to manufacturer directions.
- Combine butter, chives, salt and pepper in small bowl to make spread; mix well. Refrigerate until ready to use.
- Drain water from corn. Keeping husk intact around corn cobs; place cobs directly onto grill grid over medium heat. Grill 20 to 25 minutes or until corn is tender, turning twice. Carefully pull back, twist and remove husks; spread with chive spread.
